Sometimes not knowing the specific term to Google for makes it very hard to
find things.  In this case the correct term (as far as I know) is "smarthost".
Of course, it's not obvious that is the term for the application at hand.  So,
a quick google for "postfix smarthost" gave me a slew of hits.  The first one
looks like it may be what you need.  Though, I have to admit, I don't use
postfix so I couldn't give any comments on the quality of the links.

Hopefully just knowing "smarthost" will help you find the answers you seek.
