Yes. That is a popular thing to do.
The point of /var was to have files that changed often on servers or
other multiuser setups. IIRC FreeBSD still has /var and /var/tmp and
/tmp points to /var/tmp symbolically.
I've done your idea, but not to that extreme. I have /, /home and swap
partitions.
