I'm not sure I follow you... As Stefan pointed out, it's GPL, and they actively encourage you to change it as much as possible and find new things to make it do.  They get a kick out of people having a Drupal site that no one can tell is Drupal.  Go ahead and remove any reference to Drupal in the code or on a page.  Just have to allow others to do the same if you release it.

If you're talking functional limitations, there shouldn't be any difference between installing in your server or a web host, except how you make the database and whether or not you have Mod_ReWrite configured correctly.  My host has it working perfectly, but I can't get it to work on my server to save my life.  Mod_ReWrite is the Apache module that allows you to have nice human readable URLs (lbo.org/lesson/jan16-07 as opposed to lbo.org/?q=node/67) and isn't critical, but makes search engines happier.  

If you havent, you should really read the Handbook (www.drupal.org) and the install instructions (in the .tgz).
