Basically, pick the distro you know and like best. That will make it 
easy for you to set up and fix things quickly.

Also, you might want to check out HowtoForge for tutorials which would 
suit your needs. They have different tutorials to set up services on 
different distros.

For a quick mail-setup, I would go with:
http://www.howtoforge.com/virtual_postfix_mysql_quota_courier
if you choose a debian based distro like (k)ubuntu. There are also 
tutorials for Fedora.
