Ubuntu releases packages faster than Debian. Debian tends to not release
them until they've been tested and then tested some more. This means
that you have a rather stable system. It also means that you end up
waiting for new features. I guess it's a good trade off.
Debian will not hold your hand as much as Ubuntu and as a result, you
end up learning a good deal about the operating system. I guess you
could call that win-win.
Some people have luck with Sid. Others don't. I'd stick with stable or
testing unless you are proficient with fixing a problem or two.
