I usually install irssi, lynx, Thunderbird, Firefox and Sunbird, mc, 
Skype, Frozen Bubbles, Kaffeine, xchat and zim if they don't come on the 
default install.

I also get applets for KDE like Kweather and Kaquarium. Rather useless, 
but I like them.

I also have started installing Beryl on everything that can handle it.
