[LBo] Which server?

I run Ubuntu desktop 7.10 on an old laptop which i'm using as a server.
It has an external firewire 320GB disc that I use for SSH access. Apart
from SSH access from the internet, I also need this server to work with
my printer and scanner (Canon MP450).
I have everything working in Ubuntu with SSH via DynDNS and TurboPrint
for printing and Xsane for scanning, but I wonder if my choice of
"server" OS is wise? I'm not that savvy with what a server OS should
accomplish or provide, but I have a feeling that default configuration
files on a *real* server OS are stricter, or that permissions on
standard files are tighter etc etc.
What server OS would you recommend and why? I have been thinking about
either CentOS or Debian primarily. But I still need a desktop as I need
to print and use Xsane!
