I'm breaking this up into topics, because there are a few questions in
the post.  Doing one at a time might work better.  Also, I think I know
the answer to this one and the others I have some questions about.

I think this has to do with the vga setting in your /boot/grub/menu.lst.
 See if you can find something in the file where it says "vga=" something.

If you find it, you can try removing that to see if it comes out nice.
If it is still too big, then you can try making it "vga=791"

It would go on the end of the kernel line.  Be careful that the end of
the line doesn't drop down to a new line when you edit.  If it does, go
back up to the line above and press the delete key to bring it up so
that the line is all together on one line.

The line would look something like this:



kernel          /boot/vmlinuz-2.6.20-16-386
root=UUID=3db245ba-320f-4fd1-8671-188f2d36928c ro vga=791

If the above looks like two lines, it really should all be on one line.
 This is very important so that your system will boot.  I recommend that
you use nano to edit so that you can tell when it is on one line.  In
nano, you will see a long line with a $ on the end showing that there is
more following.  That makes it easy to tell when you have it all on one
line, because there is no wrap.
